I am so very excited about an upcoming support group meeting for weight loss surgery patients. Its on November 1st. So. very. excited. This is our annual potluck/fashion show. I not only get to cook for some of my favorite people in the whole world, but I get to wear a super hot outfit and walk the runway. Ok, its in the hospital cafeteria, but still.... the little things make me happy.
So, the cooking part...its a little challenging because you are supposed to bring something that people who are post op, pre op and also people who are just there being supportive can enjoy. In this quest, I decided to make my family the guinny pigs for a sugar free version of these brownies. I made several changes to this recipe. I made the brownie recipe from scratch with cocoa powder and truvia. And used sugar free mini peppermint patties. I also made a sign for them remiding them this is made with truvia and to "be careful". Those artificial sweeteners can be...well. Lets just say if you need a little help with making a number 2, eat a double portion of something with splenda or truvia in it. Eat more if you want immediate results. This is a little secret among weight loss surgery peeps. Just don't try this trick on a road trip. Or you will be at Kmart buying some mom jeans and new panties. Not that I would know this personally...I have just heard :)
The verdict from my family was that these were very good. You can taste the artificial sweetener, but thats normal. One good thing was that this dessert lasted more than one day in our house! So, I am thinking of bringing it to the potluck/hot momma show. I mean fashion show. I just need to cut them in very small squares (for the people who are unaware of the benefits to truvia).
Recipe:
(I doubled this since it makes 2 layers, one on the bottom, then the pp's and then another layer of brownie mix)
1/2 cup vegetable oil
18 packets of truvia
1 tsp vanilla
2 eggs
1/2 cup all purpose flour
1/3 unsweetened cocoa powder
1/4 tsp baking powder
1/4 tsp salt
Preheat oven to 350. spray a 9x9 pan with pam spray.mix all ingredients together, adding the flour and baking powder lastly. pour the first brownie batch in the pan. lay the peppermint patties as pictured. mix second batch of brownies. pour over the peppermint patties. bake for 20-25 minutes. Let cool completely in pan and cut in squares.
